Slow Cooker Lasagna Recipe

Lasagna is a huge hit in our house. We are a very busy crew so when I can talk the slow cooker into cooking anything for me, I’m all for it. This great slow cooker lasagna recipe is made just for families such as ours. Kids love pasta and lasagna is a good way to get them to eat tomatoes if they normally turn their nose up at the red love apple.

We are proponents of growing your own spices and tomatoes. If you have the space and just a little spare time, you can have fresh tomatoes and spices to use in your lasagna and other recipes. Your kids will even think they taste good if they helped grow them. Can’t you smell it now?

Slow Cooker Lasagna Recipe

We do add Italian sausage and ground beef to ours because there are currently no vegetarians living under our roof. The recipes below does not add meat but is still quite delicious.


  • 2 28-ounce cans diced tomatoes, drained
  • 3 cloves garlic, finely chopped
  • 1/4 cup fresh oregano, chopped
  • Kosher salt and pepper
  • 16 ounces fresh ricotta
  • 1/2 cup fresh flat-leaf parsley, chopped
  • 1/2 cup grated Parmesan
  • 12 ounces dry lasagna noodles
  • 1 bunch Swiss chard, tough stems removed and torn into large pieces
  • 12 ounces mozzarella, grated


  1. In a medium bowl, add:
    1. the tomatoes,
    2. garlic,
    3. oregano,
    4. 1/2 teaspoon salt,
    5. 1/2 teaspoon pepper.
  2. In another medium bowl, add:
    1. the ricotta,
    2. parsley,
    3. Parmesan,
    4. 1/4 teaspoon pepper
  3. Add 1/3 cup of the tomato mixture (1) into the slow cooker.
  4. Add  a single layer of noodles, breaking them to fit if needed.
  5. Add 1/2 the Swiss chard. Add 1/3 of the ricotta mixture and 1/3 of the tomato mixture.
  6. Top with 1/3 of the mozzarella.
  7. Add another layer of noodles then repeat with the other ingredients.
  8. Finish with a layer of noodles and the remaining ricotta mixture, tomato mixture, and mozzarella.
  9. Set the slow cooker to low and cook, covered, until the noodles are tender, 2 to 3 hours.
