Lemon Cupcakes with Jam Filling

Do you love the tangy flavor of lemon? Do you sometimes want something just a little different?

Lemon Cupcakes with Jam Filling add a nice variety to your usual chocolate or vanilla cupcake selection. With the tang of lemon and added sweet from the jam, your mouth gets a delightful symphony of flavor.

Children will love finding the jam in these cupcakes. Use a great fresh fruit type jam so the sugar doesn’t overpower the rest of the flavors.

My mother even uses jalapeno pepper jelly for some extra special flavor and uses fresh apricots or peaches in the top.

Recipe for the Cupcakes

Lemon Cupcakes with Jam Filling

Cupcakes

2 cups cake flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup sugar
1 stick butter, room temp
4 eggs
3/4 cup buttermilk
1/2 cup lemon juice
lemon zest

a. Mix flour, powder, and salt in a bowl
b. In separate bowl, cream butter and sugar until light and fluffy.
c. Beat in eggs one at a time
d. Add flour mixture and buttermilk alternately while mixing.
e. Mix in lemon juice and zest
f. Bake at 350 for 20 mins.
g. Makes 18

Filling and Topping

Raspberry jam
Whipped Cream
Berries

After cupcakes have cooled, use a small knife to cut a cone shaped segment from the top of the cupcake. Trim off the bottom of the segment you remove.
Fill the hole with jam and cover with the remainder of the segment. Top with whipped cream and berries.
