Whole Wheat Blueberry Pancakes Ingredients:

  • 1 1/4 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup milk, plus more if necessary
  • 1/2 teaspoon salt
  • 1 tablespoon artificial sweetener
  • 1/2 cup blueberries

Whole Wheat Blueberry Pancakes Directions:

  1. Start by sifting together the flour and baking powder, then set that aside.
  2. Now beat together the egg, milk, salt and artificial sweetener in a medium size bowl.
  3. Stir in flour until just moistened, add in the blueberries, and stir to slightly to gently mix the blueberries in.
  4. Now, preheat a heavy bottomed skillet over medium heat, and spray with cooking spray.
  5. Pour approximately 1/4 cup of the batter into the pan for each blueberry pancake.
  6. Cook until you see bubbles forming around the entire pancake, about 1 1/2 minutes.
  7. Flip it over gently, and continue cooking until golden brown.
