Easy Corned Beef Hash Recipe
Corned Beef Hash can be served as breakfast, lunch, dinner, or anytime snack. It’s perfect to take to work for lunches. I have even seen people make sandwiches out of corned beef hash.
Corned beef hash is wonderful with scrambled eggs at breakfast and then again with cabbage or green beans for dinner.
Corned Beef Hash is not just for the Irish and it certainly is not just for St Patricks Day dinners. This is a food that keeps your family full and happy. It’s a really nice one bowl meal when you just want to collapse in front of the tv after work.
Fast and Easy Corned Beef Hash
Make sure you keep some on hand in the freezer for those nights where it has been a very long day or for those days when you have to rush out early. Everyone has those days. Also, if you don’t have corned beef on hand, you can use this recipe but replace the corned beef with another meat such as left over pot roast.
- 6 large potatoes, peeled and diced
- 1 (12 ounce) can corned beef, cut into chunks
- 1 medium onion, chopped
- 1 cup beef broth
- In a large deep skillet, over medium heat, combine the potatoes, corned beef, onion, and beef broth.
- Cover and simmer until potatoes are of mashing consistency, and the liquid is almost gone. Mix well, and serve.
