Butterscotch Crunchies – A Fast and Easy Dessert
When I was in college in Iowa City, Iowa, I used to walk by a candy store on my way to work. Sometimes I would stop in and pick up a Butterscotch Crunchie, which was like a Rice Krispie Treat but with a butterscotch and peanut butter flavor. I found them quite addicting but I was pretty broke at that time so they were only an occasional indulgence.
I don’t remember where I saw this recipe some years later, but I tried it and it was just like the Butterscotch Crunchies that I remembered. My family loves these. They never last long around here. The Butterscotch Crunchie recipe has only three ingredients. I think you will find it pretty easy to make.
As you can see in the photo, they may be topped with chocolate. Just melt some chocolate chips and spread them on top. In a pinch I’ve used other types of cereal and it turns out okay, but Rice Krispies are really the best choice.
What You Will Need to Make Butterscotch Crunchies
A large mixing bowl
A 9 x 9 x 2 pan
2 sauce pans, a double boiler, or a microwave
Ingredients for Butterscotch Crunchies
- Rice Krispies
- 6 ounce package of butterscotch chips
- ½ cup peanut butter
I usually double this recipe and put it in a 9 x 13 pan
How To Make Butterscotch Crunchies
1. Place cereal in a large mixing bowl and set aside
2. Melt over hot, not boiling, water, the butterscotch chips and peanut butter, stirring constantly until smooth.*
3. Pour this mixture over the cereal, stirring until well coated.
4. Chill until firm, about 1 hour
5. Cut into 1 ½ inch squares
*If you have a double boiler you can use that. If not, put the water in a bigger pan and set a smaller pan over it for the butterscotch chips and peanut butter. Make sure not to get water in this mixture. If you are accustomed to using the microwave for this, then that’s ok too.
