Banana Cupcakes with Maple Brown Butter Frosting Recipe

Banana Cupcakes with Maple Brown Butter Frosting are a rich and wonderful way to the start the day or end the evening.

You can justify having them for breakfast as they are the same as having pancakes with maple syrup and bananas. Okay, it’s close anyway.

These cupcakes are the kind you take to a family get together or to an informal party where you actually care about the people there. You want them to enjoy your wonderful cupcakes.

You can make the cupcakes ahead and frost them just before serving.

Recipe for the Cupcakes

Banana Cupcakes with Maple Brown Butter Frosting

Cupcakes

1 cup mashed bananas
1 T lemon juice
1 1/2 cup flour
1 tsp baking soda
1/4 tsp salt
3/4 stick butter
1 cup sugar
1 jumbo egg
1 tsp vanilla
3/4 cup buttermilk

a. In a small bowl, combine bananas and lemon juice.
b. In a separate bowl, mix together flour, baking soda, and salt.
c. In another bowl, cream butter and sugar until light and fluffy.
d. Beat in egg and vanilla
e. Add flour mixture and buttermilk alternately while mixing.
f. Beat in bananas and mix until well blended.
g. Bake at 275 for one hour or until inserted toothpick comes out clean.
h. After removing from oven, place in freezer for a half hour.

Frosting

1 stick butter
3 cups confectioners sugar
1/4 cup milk
3 T maple syrup

a. In a saucepan melt butter at medium temperature until golden brown.
b. In a bowl add butter to sugar, then add milk and syrup.
c. Beat until smooth.
d. Top with bananas and add a sprinkle of cinnamon.
